Louis and Koen opened the first nous on the Haarlemmerplein in October 2023, in a corner building wrapped in green glazed brick, with too much light and a good record collection.
The name is French for us, and the drawing on the sign says the same thing: three people stacked in a pile, each one holding a cup. It is not a coffee counter with chairs bolted to it. It is closer to a living room that happens to have an espresso machine in it.
In March 2025 a second nous opened across the IJ in Noord. Same idea, more sun, breakfast all day.

Specialty beans, pulled properly, poured without ceremony. Espresso, cortado, flat white, batch brew. If you want it iced, it comes iced.
The same faces most mornings, and they will learn your order faster than you would like to admit.
Cookies with sea salt on top, cinnamon buns, coconut macaroons, cake. Ceremonial grade matcha whisked to order, and a lemonade that changes colour on the table.

A third nous is on the way in Amsterdam Zuidoost, with a pastry kitchen of its own. Everything made fresh, in house, every day.

Two doors. Haarlemmerplein 29, 1013 HP, on the corner where the Haarlemmerbuurt runs into the Westerpark, about fifteen minutes on foot from Amsterdam Centraal. And nous Noord at Docklandsweg 29, 1031 KN, in Overhoeks in Amsterdam-Noord, a short walk from the free Buiksloterweg ferry.
Seven days a week. Monday to Friday 08:00 to 16:00, Saturday 08:30 to 17:00, Sunday 09:00 to 17:00. Hours move a little with the season, so the board at the door has the final say.
Noord does, all day: yoghurt bowls and breakfast plates with fresh bread, a boiled egg, cheese and jam. Both places have cinnamon buns, cookies and cake on the counter from eight in the morning.
Ceremonial grade, whisked to order, hot or iced. There is a coconut matcha and a chai latte too, and a barista cacao for anyone who is off caffeine for the day.
